Nicaraguan Quesillo Recipe
A popular street food consisting of a thick corn tortilla wrapped around soft cheese, pickled onions, and a generous dollop of cream.

1 Ingredients
- 4 thick corn tortillas
- 1 lb quesillo cheese (or mozzarella)
- 1 cup pickled onions (steeped in vinegar)
- 1/2 cup sour cream (crema)
- Salt to taste

Prepare Onions
Finely chop onions and steep them in boiling water for a minute, then drain and soak in vinegar.

Assemble
Place a slice of cheese on a warm tortilla.

Wrap
Roll the tortilla and place it in a plastic bag (traditional way).

Serve
Top with pickled onions, a dash of salt, and plenty of cream.
