Nicaraguan Baho Recipe
A festive dish of beef, green plantains, and yuca marinated and steamed in banana leaves for several hours.

1 Ingredients
- 3 lbs beef brisket (cecina)
- 4 green plantains
- 2 ripe plantains
- 3 lbs yuca
- 2 onions, sliced
- 3 tomatoes, sliced
- 1 cup sour orange juice
- Banana leaves

Marinate
Marinate the beef with sour orange juice, salt, and onions for 24 hours.

Layer
Line a large pot with banana leaves. Layer the yuca, green plantains, marinated meat, and ripe plantains.

Steam
Cover tightly with more leaves and steam on low heat for 4-5 hours until everything is tender.
