Nicaraguan Mondongo Soup Recipe

- 2 lbs beef tripe, cleaned and cut
- 1 beef hoof (for broth)
- 2 corn cobs, cut
- 1 lb yuca
- 1 lb quequisque
- 1 bunch mint
- Sour orange juice

Cook Tripe
Wash tripe thoroughly with lime. Boil with the beef hoof, garlic, and onion until tender (2-3 hours).
