Nicaraguan Mondongo Soup Recipe

  • 2 lbs beef tripe, cleaned and cut
  • 1 beef hoof (for broth)
  • 2 corn cobs, cut
  • 1 lb yuca
  • 1 lb quequisque
  • 1 bunch mint
  • Sour orange juice

Cook Tripe

Wash tripe thoroughly with lime. Boil with the beef hoof, garlic, and onion until tender (2-3 hours).
